Cinnamon-Apple Pancakes
Warm and comforting cinnamon apple pancakes make for a fruity and delicious breakfast!

INGREDIENTS:
- 1 large egg
- 1 cup plain fat-free yogurt
- 1 Tbsp. canola oil
- 1 cup all-purpose flour
- 1 Tbsp. sugar
- 1 tsp. baking powder
- ½ tsp. baking soda
- 1 tsp. ground cinnamon
- ⅛ tsp. salt
- 2 small apples, cored and thinly sliced
DIRECTIONS:
- Combine the egg, yogurt, and oil in a blender until smooth. Sift the flour, sugar, baking powder, baking soda, cinnamon, and salt together. Add to yogurt mixture and blend. Carefully fold apples into the batter.
- Spray a griddle with nonstick cooking spray and heat over medium-high heat. Ladle about ¼ cup pancakes onto the griddle. Cook until bubbles form in the pancakes, about 3 minutes. Flip over and cook until done, 2 minutes more.
