Cinnamon-Apple Pancakes

Warm and comforting cinnamon apple pancakes make for a fruity and delicious breakfast!

  • 1 large egg
  • 1 cup plain fat-free yogurt
  • 1 Tbsp. canola oil
  • 1 cup all-purpose flour
  • 1 Tbsp. sugar
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. ground cinnamon
  • ⅛ tsp. salt
  • 2 small apples, cored and thinly sliced


  1. Combine the egg, yogurt, and oil in a blender until smooth. Sift the flour, sugar, baking powder, baking soda, cinnamon, and salt together. Add to yogurt mixture and blend. Carefully fold apples into the batter.
  2. Spray a griddle with nonstick cooking spray and heat over medium-high heat. Ladle about ¼ cup pancakes onto the griddle. Cook until bubbles form in the pancakes, about 3 minutes. Flip over and cook until done, 2 minutes more.
