This basic recipe is also good with bratwurst, bauernwurst, knockwurst, or kielbasa. Save the cooking liquid for boiling potatoes, beets, or cabbage.

- 16 Italian sausages
- 1½ bottles or cans of rich beer, not light
- Prick the sausages with a fork. Open the beer and pour into a large pot. Let the beer defoam for about 10 minutes.
- Add the sausages, then bring to a simmer and cook for 20 minutes.
- Turn off the stove and let the sausages cool in the beer. Serve as is, or brown in a skillet or on the grill if desired.
