Potato Latkes
This Potato Latkes recipe is a great way to not only get into the holiday spirit, but to re-use any leftover potatoes you have any time of year.
Serves: 4 / Hands-on: 45 minutes / Total: 45 minutes / Difficulty: Easy
Ingredients:
- 3 medium russet potatoes, peeled
- 1 large egg, beaten
- 2 tbsp. flour
- 1 tbsp. grated onion
- 1/2 tsp. salt
- 1/4 c. oil for frying, or as needed
Instructions:
- Shred potatoes and wring out excess moisture.
- Mix 2 cups of potatoes with flour, salt, egg, and diced onion.
- Fry Spoonfuls of potato mixture in hot oil until golden brown, pressing down to form patties.
- Serve topped with sour cream, cheese, scallions, or anything you’d like.
