Potato Latkes

This Potato Latkes recipe is a great way to not only get into the holiday spirit, but to re-use any leftover potatoes you have any time of year. 

Serves: 4 / Hands-on: 45 minutes / Total: 45 minutes / Difficulty: Easy


  • 3 medium russet potatoes, peeled
  • 1 large egg, beaten
  • 2 tbsp. flour
  • 1 tbsp. grated onion
  • 1/2 tsp. salt
  • 1/4 c. oil for frying, or as needed



  1. Shred potatoes and wring out excess moisture. 
  2. Mix 2 cups of potatoes with flour, salt, egg, and diced onion. 
  3. Fry Spoonfuls of potato mixture in hot oil until golden brown, pressing down to form patties. 
  4. Serve topped with sour cream, cheese, scallions, or anything you’d like.
