Roasted Cauliflower

Ingredients

  • 1 large head of cauliflower
  • ¼ cup olive oil
  • Salt and pepper
  • 1 teaspoon minced garlic (or more if desired)
  • ¼ cup parmesan cheese

Directions

Preheat oven to 400°F. Chop up cauliflower into florets – the smaller the pieces, the faster the cooking – and place pieces in a roasting pan. Add olive oil and sprinkle with salt and pepper, stirring to cover the pieces. Roast for about 30 minutes, turning once or twice with a spatula. Add garlic and roast for 10-15 minutes more. Heat broiler and sprinkle parmesan on top, roasting until cheese is brown (just a few minutes). Please note: The cauliflower will greatly reduce during cooking. Depending on appetites, a full head will serve 6 to 8.
