Jack-o-Lantern Personal Pizzas

Get into the season with this simple and festive dinner. Homemade pizza dough, ready in a flash, topped with simple ingredients and transformed into a friendly (or spooky, if you wish) jack-o-lantern face.

INGREDIENTS:
1 cup warm water
2 tsp. yeast
2 ½ cups flour
¾ tsp. salt
2 Tbsp. oil
2 tsp. sugar
1 jar (14 oz.) pizza sauce
Shredded mozzarella cheese
Pepperoni

DIRECTIONS:
1. Prep 2 baking sheets with foil and coat with baking spray. Set aside.
2. Put the yeast and water in a bowl and stir thoroughly to combine.
3. Add the flour, salt, oil and sugar and stir until a soft dough forms.
4. To make the jack-o-lantern pizzas, divide the dough into four equal parts. Press each section out into a circle on the foil, two to a pan. Pull out a small section to make a stem.
5. Let them stand for 15 minutes.
6. Top with pizza sauce, shredded mozzarella cheese and pepperoni (as the face of the Jack-o-Lantern).
7. Bake at 400ºF for 10-15 minutes, until the crust and cheese are turning golden brown.
Tip: This dough can be pressed out into 1 large pizza. Instead of dividing the dough, press all the dough into 1 large pizza on a prepped, foil-covered baking sheet, coated in baking spray. Pull out a little section for the stem and then add the toppings. Bake at 400ºF for 15-20 minutes, until the crust and cheese are turning golden brown.

Garden Pasta Salad

This bright salad is sure to catch everyone’s attention. It’s filled with fresh and colorful vegetables, plus it’s easy to make for a potluck or party.

INGREDIENTS:

  • 8 oz. Salad Rotini pasta
  • 1⁄2 cup cherry tomatoes, halved
  • 1⁄4 cup red onion, chopped
  • 1⁄2 cup peas
  • 1⁄2 cup yellow bell pepper, chopped
  • 1⁄2 cup sliced carrots
  • 1⁄4 cup Italian dressing

Directions:

  1. Prepare pasta according to package directions. Drain and place in a large bowl.
  2. Serve and refrigerate leftovers.

Fruit Pizza on the Grill

A delicious and fun-filled way to end a summer meal — this fruit pizza will have everyone wanting another piece!

Prep Time: 20 minutes
Total Time: 35 minutes
Serves: 8 | Difficulty: Easy

INGREDIENTS:

  • 1⁄2 cup butter, room temperature
  • 8 ounces cream cheese, room temperature
  • 3⁄4 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • 1 tablespoon water
  • 1 can (11 oz.) refrigerated pizza crust dough
  • 1 1⁄2 cups fresh or frozen peach slices, thawed
  • 1 1⁄2 cups fresh or frozen mixed berries, thawed

Directions:

  1. Lightly spray grill grids, then prepare the grill for medium heat.
  2. Combine the butter, cream cheese, powdered sugar and vanilla extract in a medium bowl and beat with a mixer on low speed until smooth and creamy. Set aside.
  3. Combine the honey and water in a small mixing bowl until smooth. Set aside.
  4. Carefully unroll pizza dough onto a flat-sided nonstick cookie sheet, and then flip onto the hot grill. Grill 3-4 minutes on each side (using the cookie sheet as your spatula when flipping and removing the crust).
  5. Brush one side of the pizza crust with the honey mixture and cook for an additional minute. Remove the crust from the grill and allow to cool for 5 minutes.
  6. Spread with cream cheese mixture and arrange fruit on top. Cut and serve immediately.

 

Tacos

You can use flour or corn tortillas in this recipe. Flour tortillas are soft and corn tortillas can be steamed lightly to soften them or fried to make them crunchy.

Ingredients

  • 1 Tbsp. vegetable oil
  • 1 medium onion, peeled and chopped
  • 2 small jalapeño peppers, seeded and minced
  • 3 garlic cloves, peeled and minced
  • 1 Tbsp. chili powder
  • 1 Tbsp. dried oregano
  • ¼ tsp. ground cayenne pepper
  • 1 tsp. salt
  • ¼ tsp. ground black pepper
  • 2 lbs. ground beef
  • 16 small flour tortillas, warmed
  • ½ cup salsa
  • 1 cup shredded Cheddar cheese
  • 1 cup quartered cherry tomatoes
  • ½ cup shredded iceberg lettuce
  • ¼ cup sour cream

Pork and Pineapple Skewers

  • 1 tsp. salt
  • ½ tsp. chili powder
  • ½ tsp. ground cumin
  • ¼ tsp. pepper
  • 1 cup fresh pineapple cubes (12 cubes)
  • 4 (12”) metal or wooden skewers (Soak skewers if using wooden ones.)
